Fresh Veggies On a Table

Summer, all vegetables are growing, blush, get yellow and generally delight the eye.

This year, parsley grows like crazy. They said it should be planted so that the parsley was growing crowded. So I did this spring. I also have some lettuce, peas and beans, tomatoes, cucumbers, zucchini and beet.

Here I have a full set of veggies for lunch salad: ripe tomatoes, fresh cucumbers, clove of garlic, some leaves of lettuce and parsley are already on the table. I have to wash and cut them all.

I’ll add a little salt and sunflower oil, but I prefer to add some sour cream. A great salad for lunch.

And what else? I take middle-size zucchini, 2-3 small onions, one ripe tomato from greenhouse and fry everything with oil. You can add some meat or fish, if you wish. I love some piece of bread. The black, rye one.

Now a cup of tea. I love tea with mint, lemon balm, or monarda leaves. Sometimes I take all these at once and put with tea bags into a teapot. Enjoy a perfect summer lunch!

I decided to write about my vegetables because of Holley's post “GardenBook Reviews July 2013”, she writes that started growing and eating more vegetables. She knows how good vegetables really are for people. Now it's your turn! Please join us on the 20th of every month!

  3. I like your presentation - simple, nutritious, and delicious. Such a healthy meal. The best part is that the vegetables are home grown and most likely to be pesticide and fungicide free.

    1. Astrid, we, the people living in Northern Europe, love dark rye bread and eat it with many meals, for breakfast, lunch, dinner and when are hungry! May be one day I would cook the salad for you too, who knows. Thank you!

  15. Oh, your dishes look so good, Nadezda! It's great to cook veggies from your own garden! I don't have any edible plants in my balcony. Looking at your photos, I would like to grow some veggies. Anyway I've never had salad with sour cream, it's not common in our country, I will prepare it for dinner tonight!
And thank you for introducing Oslo Botanic garden:) I saw your blog, and was impressed!! Someday, I want to visit there!!!

    1. Some herbs and vegetables grow well, in pots on the balcony, Keity. Lettuce, parsley, dill, onions. Some people grow specials varieties of tomatoes en pots as well. I think sour cream imparts a bit soft taste to salad. Hope you could see this nice Botanic garden some day!
      Thank you!

  17. Could I come and join you for a beautiful summer salad?

I didn’t know you can use monarda leaves; I use lemon balm and mint but not monarda.

    1. Oh. yes, Frico, you always can have a salad with me!
There is Earl Grey tea with 'bergamot' and if you put 2-4 Monarda leaves in tea pot with black tea bags you will have the same taste.
      Thank you!

  21. Your veg creations look great... we don't take the time to do veggies very much I'm afraid... we try to make up for it with fruit which lasts longer in the fridge. Probably not the wisest way to take care of ourselves, but the way it is in our busy lives... Larry
